HOT-SMOKED SALMON SWEET CHILLI PASTA



Ingredients:
250 gm dry tagliatelle
+150gm hot smoked salmon (not thinly sliced)
+25 gm butter
+2 tablespoons rapeseed oil
2 small red onions, finely chopped
3 large cloves garlic, finely chopped
1 heaped teaspoon of ground coriander
1/2 heaped teaspoon sweet smoked paprika
~12 cherry tomatoes, depending on size
1 level teaspoon mustard powder
1 level teaspoon ground black pepper
1 tablespoon fish sauce
1 teaspoon maple syrup
2 tablespoons sweet chilli sauce
~50 gm grated or thinly sliced cheddar
1/2 glass white wine + 1 heaped teaspoon cornflour stirred in


preparation:

Gently heat butter and oil, and add onion and garlic, coriander and paprika.
Boil a kettle of water, use some to skin the tomatoes, and keep the rest to cook pasta.
When onions and garlic are cooked, add tomatoes, mustard powder and black pepper,
fish sauce, maple syrup and sweet chilli sauce. Continue cooking gently until the tomatoes collapse. Add cheddar; keep stirring until melted.
Meanwhile, cook the tagliatelle (in another pan!) for ten minutes or as advised on a packet, and drain it.
Flake the salmon into the sauce, then add the wine and cornflour mixture.
Increase heat and keep stirring until thick. Add the drained tagliatelle, mix and serve.

Ingredients:

For the Sauce:
• 2 teaspoons minced chipotle chili, canned in adobo sauce (about 1 chili)
• 2 tablespoons fat-free buttermilk
• 2 tablespoons minced fresh cilantro
• 1/2 cup fat-free mayonnaise

For the Tacos:
• 8 (6-inch) white corn tortillas
• 4 cups shredded green cabbage
• 4 servings Cedar-Planked Salmon with Barbecue Spice Rub
• 1/3 cup chopped green onions
• 1 cup diced seeded tomato (about 2 tomatoes)
• 3 tablespoons fresh lime juice

preparation:


1. Preheat the Oven to 250 Fahrenheit.

2. Have a rectangular shallow ovenproof dish and lightly grease the inside. Keep it aside, you will use it later.

3. In a bowl, mix the minced cilantro, mayonnaise, minced chipotle, and butter milk. Mix it well until all of the ingredients are coated in mayonnaise.

4. Chop the cedar-planked grilled salmon into 1-inch pieces and spread the grilled salmon on the greased oven-proof dish and cover tightly with a foil.

5. When it is done, proceed with wrapping the corn tortillas in the foil and seal.

6. Place the grilled salmon and the corn tortillas in the oven and bake for about 15 minutes.

7. In another bowl, mix the shredded cabbage and chopped onions with the lime juice. Mix it well.

8. Remove the fish and the corn tortillas from the oven when they are done.

9. Before serving, divide the salmon into 8 parts, take one tortilla, and spread the sauce down the middle. Place a portion of the fish on the sauce and top with the cabbage-onion mixture and diced tomatoes. Fold it in half and serve immediately. Repeat with the remaining corn tortillas.

1 teaspoon curry powder
1 teaspoon ground black pepper

Preparation :


Combine tuna, pickle sauce, lemon juice, mayonnaise, Dijon mustard, cinnamon, curry powder, black pepper, and salt in a bowl. Stir to combine ingredients well. Cover and refrigerate for at least 1.30 hours before serving.

1 avocado, cored and halved
1 1/2 Pink salmon cups (from can), drained
1/2 cup finely chopped celery

1/4 cup mayonnaise

3/4 teaspoon seasoned salt


Preparation :

Ingredients:

4 small lobsters
1 onion
1.7 oz of butter
1 glass of olive oil
1 cup of rum
Salt and pepper


preparation:

This is a fine meal for up to 4 people, although if you're feeling very hungry two can probably polish it off. As it's such a fine meal, be sure to use the finest ingredients for the best finish. Start off mincing the onion, and let the fragments saute with the olive oil and butter in a large tray for a few minutes. Then add the lobsters and let them cook for about 10 minutes, turning frequently to cook them evenly. Season the lobsters with salt, pepper to taste.

Now, after the 10 minutes have passed, pour in the cup of rum and increase the heat until flames appear in the tray, taking care as you do it. When the rum has evaporated off, the flame will burn out, and at that point, you can take out the lobsters, place them on a dish and pour the remaining oily liquid onto the tray. You can add an assortment of herbs to a dish to add on to taste and provide a simple salad to go along with the lobsters. Top it off with some black pepper to taste. Serve while very hot.

Chinese Noodles


Ingredients:
Squid With Chinese Noodles Recipe (for four)
- Twelve squids
- Four garlic cloves
- Flour
- 100 grams of Chinese noodles
- Six springs of chives
- Some olive oil
- Modena vinegar
- Parsley
- Salt


Preparation:
- Cut and clean the squid. Cut the fins and tentacles and stuff them inside the squid.
- Roll the squids through flour, and add salt. Pour cooking oil into the frying pan, add garlic cloves and squids and fry.
- Cut the noodles into eight centimeters strips and separate them in four piles. Bond each pile with a chive sprig then fry them in a frying pan with plenty of oil.
- Arrange the squids around the plate with the noodles positioned at the center. Pour a little amount of cooking oil into a bowl, add two tablespoons of Modena vinegar, and seasoned the squids.
- Decorate with parsley
- If you do not have chives to bind the noodles, you can use the green part of the leek sliced into thin strips.

Ingredients:
 
  • 1 lb of lobster
  • 3 tbsp of butter
  • 1 onion (sliced)
  • 1 minced celery
  • 2 tbsp of flour
  • 2 1/4 cup of milk
  • A pinch of cayenne pepper
  • 2 egg yolks
  • 2 tbsp of liquid cream
  • 2 tbsp of brandy
  • 2 tbsp of sherry
  • Salt to taste
  • Pepper to taste
 

Preparation:
Start by removing the meat of the lobster and chopping it into nice chunks. Preheat your oven to around 200 degrees Celsius and place the shell into the oven for 20 minutes, then remove it and crush it as fine as possible.
 
Now, melt the butter in a pan over a medium flame, then add your crushed shell, onion slices plus your minced celery, then cover the pan and simmer for 20 minutes. Then, add the tablespoon of flour, stirring constantly and letting the mixture fry ever so slightly. Take off the flame and pour in the cups of milk bit by bit - keep stirring! Season with cayenne pepper, and salt and pepper as you like it.
 
Simmer it again and keep cooking for 20 more minutes. Pass the preparation through a strainer and pour into the same saucepan, and after whisking the egg yolks with cream, add them too and keep stirring as they simmer, until the cream thickens. Don't let the cream boil, you want it to maintain its consistency.
 
Finally, add the lobster meat, a dash of brandy if you like, but definitely the sherry. One final dash of seasoning and then serve hot. Enjoy!

    Ingredients:

    3 ripe avocados
    1 shallot, peel, and chop
    1 clove of garlic, peel, and slice
    500 grams prawns, peeled and cooked (fresh is perfect if you can get good quality)
    1 fresh chili, deseeded and sliced
    200ml creme fraiche
    2 limes, cut and squeeze the juice in a bowl
    100ml good quality extra virgin olive oil
    (if you have fresh, raw prawns, the following:
    400ml of good fish stock and a bouquet garni)


    preparation:

    If you have fresh prawns, peel them, clean and divine the prawns, then put a pan on heat, add the stock and the bouquet garni, once it boils, poach the prawns for 2 - 3 minutes. Take them out, rinse and let them cool down in a colander. Then put the prawns in the fridge and chill them. 

    In a blender, puree the avocados, onion, chili, garlic until it becomes a smooth paste.

    Use a tall glass and set the prawns in the first layer and top with the puree dressing.

    Do this layer by layer until it reaches the top.

    Serve immediately.

    Alternatively, you could also halve the avocados, then scoop out the flesh and keep the skin halves. You then serve the cocktail in the avocado skins.

    The procedure for preparing stuffed lobster tails is as follows:
    • Take the lobster tails and remove the meat from them. Keep the shells aside. Cut the tails into small bite-size pieces.
    • Take the butter and melt it in a frying pan. Add the crab meat, the shrimps, scallops and the lobster meat to the butter. Sauté this to about 2 minutes. Next, add mushrooms. Constantly stir this mixture of seafood and continue to cook the thing till the shrimps turn pink in color. Now remove the entire thing from the heat.
    • The next step is an interesting one and you should be extra careful in doing this. Pour some brandy over the mixture of seafood and light it up with a lighter. After the flame goes out, keep the dish aside.
    • Melt some butter again and put in some paprika and flour in the butter and stir well. Cook this mixture for about 2 minutes. To this keep on adding milk and stir till the mixture thickens. Mix some wine and stir again.
    • Pour this sauce over the seafood mixture. This mixture is put into the shell of the lobster and some cheese is put on the shell. Broil the lobster tails in the oven until it turns golden in color.
    Serve the stuffed lobster tails hot and see how your guests appreciate this wonderful recipe. Garnish the thing with some fresh onions, lime, and coriander leaves.     * 4 flounder fillets
    * 1 tablespoon low-fat margarine

    * 2 tablespoons light soy sauce

    * 2 teaspoons sesame oil
    * 1 teaspoon honey
    * 1 teaspoon lightly toasted black sesame seeds
    * 6 ounces shiitake mushrooms, stemmed and thinly sliced
    * 4 leeks, green tops only, cut into 1-inch pieces
    * 1 large carrot, peeled and cut into 2-inch long matchstick strips
    * 1/2 large red pepper, seeded and cut into thin strips
    * Steamed rice, accompaniment
    * Sauteed Shiitake Mushrooms

    Sauteed Shiitake Mushrooms Recipe:

    * 2 tablespoons olive oil
    * 3/4 cup sliced shiitake mushrooms
    * 1 tablespoon sesame oil
    * 2 tablespoons light soy sauce
    * 2 tablespoon sake
    * 4 lemons, zested and juiced

    preparation:

    Preheat the oven to 375 degrees. Cut 4 large squares of heavy aluminum foil large enough to hold 1 flounder fillet and one-quarter of the vegetables. Lightly put margerine one side of each and set on a work surface.
    Lay the fish flat in a baking dish. In a bowl, whisk together the sake, light soy sauce, lime juice, ginger, sesame oil, honey, and black sesame seeds. Pour over the fish and let marinate for up to 45 minutes. Arrange 1 fish fillet on each sheet of aluminum foil and top with one-quarter of the shiitake mushrooms, leeks, carrots, red peppers, and marinade. Wrap tightly and place on a baking sheet. Bake until the fish is cooked through and the vegetables are tender 20 minutes. Remove from the oven and unwrap each package. Transfer the fish and vegetables to 4 large plates and top with the cooking juices. Serve with Sauteed Shiitakes and hot steamed rice.
    Sauteed Shiitake Mushrooms:
    Place a saute pan over medium-high heat. Add the olive oil and heat. When the oil is hot, add the mushrooms and saute until they begin to give up their liquid, about 5 minutes. Add the sesame oil, light soy sauce, sake, and lemon juice and zest and cook for 3 minutes.

    Paella, pronounced pa-eh-ya, is a testament to the wonderful flavors of Spanish cuisine. It is a complete and well-balanced meal in itself: a mixture of rice, meat, vegetables and/or seafood depending on which paella recipe you're following. Traditional paella recipes use mainly chicken, pork, rabbit, or snails but because of Valencia's coastal location, the seafood paella version has increasingly become the more popular, and it is usually this that tourists and people not local to the region know.     In the olden days, paella was cooked over a wood fire, a method still preferred by purists and traditionalists to this day. Given the difficulty of making, manning, and cooking over a wood fire, however, you can now make a great paella using a charcoal grill if you want to embark on a semblance of the authentic paella experience. In addition, paella pans have thin bases, so they are not recommended for burners. But if you're determined to have a go at paella-making, a regular gas burner with settings for a really low fire will do.

    Prepare the ingredients ahead of time. Soak the white lima beans overnight and drain before cooking. To give a unique golden color to your dish, soak the saffron threads in the stock for 5 minutes before cooking.
    Start a fire in the charcoal grill if that's what you're using. When white ash has covered the coals, you can put the paella pan on. For regular gas burners, turn the heat on high. Splash in enough olive oil to cover the bottom of the pan and heat. Saute the garlic and onion until translucent but not browned. Add seafood in, stirring constantly to prevent from sticking to the pan.

    When the seafood has turned a light brown, put the green beans and lima beans in and mix together. Halve the ingredients in the pan and add the tomatoes and paprika in the middle, frying until they look a bit pasty. Pour in the rice, making sure to coat the bottom of the pan evenly. When adding the stock to your paella, it should be hot. Keep the temperature consistent when cooking. Heat the stock on low heat.
    Stir and mix the rice, sofrito base, and stock for a few minutes before leaving it to settle. It will form a nice crust on the bottom called socrat . Allow the paella to simmer until the rice is cooked. If the paella looks dry, pour in more stock until all of the stock has been absorbed by the rice.
    Take the paella off the fire and cover with foil. Let it stand for 10 minutes, then garnish with lemon wedges. Paella is best served when warm, not piping hot and in the pan. Dig in with wooden spoons and a glass of wine to enjoy a true Spanish meal!
