Baked Mediterranean Vegetables with Crumbs



Cooking time: 45 minutes
Prep time: 20 minutes
Servings: 8

Ingredients:


4 garlic cloves
Olive oil
18oz of eggplant
18oz of zucchini
Thyme sprig
18oz of bell peppers
Salt
Bread crumbs
Pepper
4 onions
Bay leaf
18oz of tomatoes

preparation:

1. Switch on Air Fryer and preheat up to 380oF.
2. Cut tomatoes and bake for 2 minutes.
3. Mix eggplant with olive oil and spices and cook for 4 minutes in Air Fryer.
4. Cook zucchini with olive oil in the Air Fryer for 4 minutes.
5. Finally, add tomatoes and bell peppers to the mix from the other vegetables and bake for 2 minutes more with olive oil and crumbs.
6. Serve in deep salad plate with cheese by the taste.

2 slices bread
Fresh basil leaves
Olive oil
1 camembert

preparation:

1. Switch on Air Fryer and preheat up to 340oF.
2. Cut bread into small stripes. Cover them with olive oil and cook in the Air Fryer for 5
minutes.
3. Place camembert on the frying pan for the Air Fryer.
4. Cook in Air Fryer for 15 minutes, then add bread slices and cook for 3 minutes more.
5. Cover with salt, pepper and serve with fresh basil leaves.

Meal 1 – BREAKFAST 

Peanut Butter and Jelly Oats with Creamy Scrambled Eggs, Chives and Tender Stem Broccoli 

2 whole eggs + 4 egg whites 

100g Rolled Oats 

1 tsp Peanut Butter Natural Sugar free Jam 

1 tbsp chopped Chives Sea salt Black Pepper 

60g Broccoli

 ◊ Steam broccoli for 5 minutes then add into a pan with your eggs and sea salt until cooked through. Chop chives and add in at the end with pepper. ◊ Cook your oats in water then add in peanut butter + jam


Meal 2 – SNACK 

Avocado and Lemon Tuna rice cakes 

½ an Avocado 2 Brown Rice Cakes

 ½ a lemon, juice 

½ tsp chili powder

½ tin of drained brine tuna 

1 tsp grainy fresh mustard


 ◊ In a bowl mash add ingredients together and spread onto rice cakes.

Meal 3 – LUNCH 

Honey and Paprika Glazed Chicken with Quinoa 

6oz Chicken Breast 

2 tsp extra virgin Olive Oil 

60g Quinoa 

2 tsp Honey 

1 handful spinach 

1 small handful of parsley and coriander 

1 tsp paprika 

1 tsp black pepper 

1 tsp cumin 

½ a fresh green and red chili 

1 pinch sea salt 

4 vine tomatoes 

½ fresh limejuice and zest

 ◊ In a bowl, add paprika, cumin, pepper, salt, olive oil and mix together. Base the chicken and marinade in fridge for 10 minutes. 

◊ Grill the chicken on a high heat on a non-stick pan, turning every 2 minutes until evenly browned. Once browned, add 2 tsp honey and squeeze limejuice into the pan and cook until caramelized.

 ◊ Cook quinoa as stated on packaging and add greens when plating up.


 Meal 4 – SNACK 

Post Workout Shake

300mls water


Meal 5 – DINNER

 Beef and Broccoli Stir Fry 

5oz Beef Strips (rump or sirloin) Broccoli Florets 

3 Turkey Bacon rashers 

20g Cashews, chopped 

2 tsp extra virgin olive oil 

Paprika 

Red Onion 

Spring Onion 

Sea Salt 

Pepper

 ◊ In a pan, add 1 tsp olive oil, your diced red onion, spring onion and finely chopped broccoli. Allow them to sweat on a medium heat for around 4 minutes before breaking up the turkey bacon and add it into the mixture for 2 minutes. 

◊ Add in your steak + paprika with 1 tsp olive oil and cook until steak is cooked to your liking. 


Meal 4 – BEDTIME SNACK 

25g Whey Protein 

200g of Fat Free Greek Style Yogurt 

½ tbsp. Natural Honey

6 sprays 1kcal spray 

2 cloves of Garlic 

1 ½ Diced Onion 

1 tbsp finely chopped ginger 

2 Red chili’s 

2 Red Bell Peppers 

300g Spinach 

2 Handfuls of Chopped Fresh Coriander 

◊ Heat some sesame oil in a pan, add onion, garlic, ginger and stir for 2-3 minutes. Add in thai paste and cook for 1 minutes, add the chicken, cook for 2 minutes. 

◊ Add 300mls coconut milk, bring to boil reduce heat to simmer and cook until sauce thickens. 

◊ Add chopped chilies, bell peppers, spinach, salt and pepper. Take off the heat and add in finely chopped coriander. 



Meal 4 – SNACK 

Post Workout Shake 

1 Scoop Whey 

40g Oats 

300mls water



Meal 5 – DINNER 

Garlic and Chili Sea Bass with Avocado 

8oz Sea Bass Fillets Garlic Red Chili Green Chili 

1 tsp low sodium soy sauce 

2 tsp sesame oil 

½ an avocado 

1 whole tomato, sliced finely 

½ lime, juice 

◊ In aluminiam foil, add your sea bass, chili, garlic soy sauce, sesame oil and lime juice. Place into a steamer and cook for 5-6 minutes depending on size of fish. 

◊ Add chopped tomato and avocado to place, grade lime zest on top, add fish and serve. 


Meal 4 – BEDTIME SNACK 

25g Whey Protein 

200g of Fat Free Greek Style Yogurt 

½ tbsp. Natural Honey

Serves 1 - Prep Time: 15 mins - Ready in 10 mins

PEANUT BUTTER BANANA QUINOA BOWL


Ingredients: 

● 1 Cup of uncooked quinoa 
● 1/4 Cup unsweetened soy milk 
● 1/2 Tbsp of cimmamon 
● 1/2 Tbsp of chia seeds 
● 2 Tbsp of organic peanut butter 
● 1/2 cup of unsweetened almond milk 
● 1/2 Cup of raw almond milk 
● 5 Drops of liquid stevia

preparation: 

 1. In a saucepan bring to the boil, soy milk, quinao and cinnamon. 
2. Reduce heat and simmer for 10 minutes. 
3. Remove from heat and stir in chia seeds. 
4. Cover the saucepan with a lid and place aside for 10 minutes. 
5. In the meantime, microwave peanut butter and almond milk for 15 seconds on high. Remove and stir until runny. 
6. Stir in coco powder and stevia. 
7. To serve fluff the quinoa with a fork and place into a bowl. 
8. Top with slice apple.

You’ll only need a few simple ingredients to make these keto pancakes.

    for 3 servings

    110g (4 oz) flour
    1 tablespoon baking powder
    2 tablespoons organic sugar
    2 large eggs
    1 tablespoon oil
    300 ml (1/2 pint) non-dairy milk
    1 teaspoon vanilla
    Pinch of salt


    preparation:

    Making the Pancake Batter:

    Sift the flour and salt into a mixing bowl, making a pile in the middle, like a very small mountain. Then use a spoon to make a crater in the middle. Break the eggs into the crater and then mix this with a spoon, when the flour is blended into the eggs you can start using an electric whisk if you have one, or a handheld whisk if you are going the manual labor route, gradually add the milk. Mixing the eggs gently before going electric prevents flour going all over the place.
    Whizz the whisk until the flour, eggs, and milk has made a smooth runny batter.

    Pouring out the Perfect Pancake:

    Now you can get out your frying pan and a ladle. It might take some experimentation, but an average size ladle generally makes a good measuring device for a good pancake. So after putting just a small drop of oil in the pan and smearing that about as the stove heats the pan, you can drop in a ladle full of pancake batter. Drop it into the middle and then work the pan in your wrist so that the batter spreads around the pan evenly. Place the pan back onto the stove and wait for a minute or so and you should be able to see when the top of the pancake gets a bit firmer and does not look all batter-like, then you can use a spatula to gently work the pancake loose around the edges and flip it over. The other side of the pancake needs less time, just enough to lightly brown it.

    How to Flip a Pancake:

    Pancake flipping is a skill that is not too tricky to develop, yet is mighty impressive. First of all, follow the instructions above (poring out the perfect pancake) until you reach the part where you loosen the edges of the pancake with a spatula. (This loosening might not even be necessary for some non-stick pans.)
    Now, when the pancake is loosened and you can slide it around in the pan by shaking your wrist from side to side, you want to maneuver the pancake to the far end of the pan (the end away from the handle.) So the pan will be angled downward away from you.

    Next you give a swift flick of the wrist, shooting the pancake into a somersault. Use your hand-eye-coordination to catch it again. You might suffer one or two pancake casualties, but you'll pick up the knack soon enough. With just a few practice tosses you can go from a little baby flip to a massively impressive triple flip that scrapes the ceiling and earns a cheer from the children. A dad making pancakes in this way is well fun for little ones.

    • 1 cup of unsalted butter or margarine
    • 3 tablespoons of baking soda
    • 4 large eggs
    • 1 ¼ cups of sugar
    • 2 tablespoons of unsalted butter (this is separate from the butter used for the bread)
    • 3 large bananas
    • ½ teaspoon of salt

    preparation:

    - The first step is to preheat the oven to 350°F. This will save you time later.
    - Mash the bananas (you can use a blender) and set aside.
    - In a deep bowl, beat the butter and sugar together to get a fluffy mix.
    - Add the mashed bananas to the fluffy mix and blend.
    - Break the eggs in, one by one, and fold well after each addition.
    - In a separate bowl, mix the rice flour, baking powder, and salt.
    - Add this to the prepared banana and egg mix.
    - Mix well and check for any lumps. Lumps in the loaf will lead to the bread being cooked unevenly.
    - Grease a bread loaf tin with butter. Coat evenly on all sides.
    - Dust a fine layer of rice flour on the butter to prevent the bread mix from sticking to the tin. -This will also give the bread loaf a crusty outer covering.
    - Pour the bread mix in the loaf tin and spread evenly.
    - Let the bread bake in the preheated oven for about 1-1½ hours or until the top of the bread is firm to touch.
    - Take the bread out of the oven and let it cool for 10 minutes.
    - Mix the icing sugar with the freshly squeezed lemon juice to make the lemon drizzle.
    - Drizzle over the top of the bread loaf and let the bread cool completely.
    - Gently remove the bread from the tin and cut in slices to serve.
    - This bread can be stored in an airtight container for up to 2 weeks.

    You will need to bake this cake for about 50 minutes, but do not forget to keep an eye on it! Always check if you can poke the center with a toothpick or knife and if nothing sticks to it, then you are all set!

    5. Add seasoning and cauliflower on the frying pan and cook for 3 more minutes.
    6. Open Air Fryer and put some cream cheese inside, cover with cauliflower rice. Cook in Air Fryer for 10 more minutes.
    7. Serve with the fresh basil leaves.
