preparation:
1. Switch on Air Fryer and preheat up to 380oF.2. Cut tomatoes and bake for 2 minutes.3. Mix eggplant with olive oil and spices and cook for 4 minutes in Air Fryer.4. Cook zucchini with olive oil in the Air Fryer for 4 minutes.5. Finally, add tomatoes and bell peppers to the mix from the other vegetables and bake for 2 minutes more with olive oil and crumbs.6.
