In today's world it seems it's the kids who enjoy Halloween more than the grown-ups, so having the perfect food and snacks after they have been tricking or treating is a must and will keep them interested and happy all night long. There are many weird and wonderful things you can make to make the night of the witches go with a bang and they are sure to be a favorite among the children and adults too.


What better way to start the night than with toffee apples? They are a classic having been enjoyed for countless years by kids and adults alike.


This recipe is for 12 apples or 12 guests, if you have more guests coming then use more ingredients.

Scary Halloween Food


Toffee Apples


Ingredients:


12 Small Apples

250g White Sugar

130ml Water

2 ½ tbsp Golden Syrup

½ tsp Vinegar

Method

Cover a baking tray with greaseproof paper.

Wash and then dry all the apples before inserting a wooden lolly stick or skewer into each of the apples.

Adding the water, sugar, and vinegar to a pan. Keep stirring while bringing it to a boil.

You will need to get the liquid very hot, around 150C. One way of knowing if the liquid is hot enough is after 5-10 minutes drop a small amount of the liquid into a container of cold water, if it hardens it's hot enough.

Now take the apples and cover them with the mixture. This can be done by rolling each apple around the pan until covered.

Place on the baking tray and leave until the liquid on the apples hardens.



Orange Filled Pumpkin Biscuits

One thing that will get the kids smiling is these wonderful pumpkin-shaped biscuits. It's an excellent Halloween cookie recipe, they are easy to make and taste great. Just bake a couple of hours before serving otherwise they go soft.


Ingredients:


140g soft butter

175g plain flour

50g sugar

Zest 1 orange

Filling

2 tbsp of either orange, pineapple, or strawberry jam

Method

Mix all the ingredients together until you have a soft dough, you can use a mixer or wooden spoon to do this. Roll into a ball and wrap in cling film before placing in the fridge for about an hour.

Preheat oven to 180°C or gas mark 4 .

Flatten a work surface lightly, then roll out the dough. You want the dough to be about 4mm thick. With a cutter cut out circles or if you have a pumpkin shaped cookie cutter all the better! Whatever you use make sure the cookies are 7cms. When you have the cookies count them then half them. The reason for that is because on half of the cookies you are going to put faces on them with the other half being the cookie base.

With a sharp knife create the faces on half the cookies.

Bake them all for 15 minutes or until lightly brown before removing and cooling them on a wire rack.

Once cool take your preferred jam, spoon it into a small container and mix quickly with a fork.

Spoon the jam onto the bottoms of the biscuits then gently push the face cookie on top. Don't worry if a little bit of jam squashes through the eyes and mouth as it will add to the Halloween effect.

Serve immediately as they will go soft if left. Oh and if you don't serve them straightaway you could end up eating them yourself!

Before you send the kids out into the cold night air trick or treating why not serve them these delicious snacks? Doritos or corn chips are the preferred snack here along with a homemade dip and washed down with a juicy smoothie.



Corn Chips with Bloody Snot Dip


Ingredients:


8oz cream cheese

¼ cup chives

2 slices of ham

¼ green pepper

¼ red pepper

You will also need corn chips or Doritos but why not make your own? They are simple to make, just look online for corn chip recipes.

Method


Chop up the ham, chives, and peppers into small pieces then put them into a blender with the cream cheese.

Blend until creamy then serve with the chips.



Bloody Entrails Smoothie

To get this smoothie just right the key is not to thoroughly blend everything until smooth, instead blend until almost blended but you can still see pieces of the banana and strawberries. A perfect start to the trick or treating night along with the chips.


Ingredients


500g strawberries

1 banana

175ml natural yogurt

1tbsp honey

Method

Take the tops of the strawberries then put them in the blender.

Remove the jacket of the banana cut it into slices and add to the blender.

Add the other ingredients then blend until almost creamy.

Serve in a glass.

Halloween is a special time of year for all and sundry including the kids who just love this time of year, so why not serve up some wonderful and delicious Halloween snacks for kids? They are simple to make and delicious to eat, just watch out for the adults who will love your tasty Halloween snacks too.

Lobster Fried Rice


Serving size: 3


Ingredients:

2 cups steamed lobster meat

4 tablespoons olive oil

1 teaspoon garlic, mined

1 onion thinly chopped

2 eggs

3 cups steamed white rice

3 1/2 tablespoons soy sauce

3 green onions, finely chopped

1 teaspoon pepper

Lobster Fried Rice


Preparation:

Heat olive oil in a non-stick frying pan over high heat. Add garlic, and onion, and stir-fry until fragrant, about a minute. Add egg and stir until almost set but still moist. Add lobster meat, steamed rice, and soy sauce, and season with pepper. Cook for 2 minutes. Add green onion and stir fry until all is well mixed together. Serve with fresh cucumber and lime wedge.


Pineapple Fried Rice


Serving size: 1


Ingredients:

1 grilled pineapple wedges, cut into the bite-size pieces

1 clove of garlic, peeled and roughly chopped

2 tablespoons canola oil

¼ cup country-style boneless pork, thinly sliced

A quarter of a honey ham

5 medium shrimps peeled and deveined, leaving the tails on

1 green onion, cut into 1-inch long plus 1 green onion to garnish

1 cup steamed white rice

1½ tablespoons soy sauce

½ tablespoon sweet soy sauce

5 cashew nuts

½ tablespoon white pepper

1 beaten egg


Preparation:

Heat the oil in a frying pan on high heat. Add garlic and cook until fragrant, 1 minute. Add shrimps and stir fry until shrimps are cooked through about 2 minutes. Add pork, honey ham, soy sauce, sweet soy sauce, cook and stir-fry to mix well, about 5 minutes. Add egg and stir until almost set but still moist. Add steamed rice, cashew nuts, white pepper, grilled pineapple, and green onion. Continue to cook for a minute more. Serve with green onion.

Caramel Apples


Healthy Treats for Halloween?


In this time when a lot of our youngsters are already struggling with weight problems we also need to think about healthy snacking. Halloween is a holiday in particular where treats, snacks, and food is important but there really are ways to reduce the amount of sugar and fats we give our children as a treat.


A few yummy ideas for reasonably healthy Halloween treats are:


#1 Caramel Apples


Although caramel apples contain a lot of sugar we can also create a 'light' variation. And because it is one of those Halloween treats most children love you are still giving them something they want. Caramel apples are easy to make, just place a Popsicle stick in the center of the apple and melt some squares of caramel in a saucepan and dip the apple half in the caramels and let the caramel drip around the other half. You can roll the apple in nuts or raisins to create a bit of a chunky feeling. because you only dip half of the apple you use less sugar and create a scary looking apple in the same time.


#2 Halloween Goo


Most people like Jell-O and when you add some small pieces of fruit in the shape of body parts you have created a mystery Halloween Goo that the kids will love. Just cut some fruits in to shape and make the Jell-O according to the package. Refrigerate the Jell-O with the fruit for at least two hours. Children will love to pick the body parts out of the Jell-O.


#3 Cut off fingers


Something simple and very spooky is cut off finger treats, you can use some cans of small hot dogs and create, with ketchup, a nail on the end of the finger. You also need to tear the end of the hot dog as if the finger was torn off. You can place it in a small box or on top of a bowl of spaghetti to make it scarier to pick out the finger.


As you can see there are many different Halloween ideas for treats, that are easy, fun, tasty, and healthy. And you probably will think of many more if you stop and think about it. Look at vegetables, fruits, cheese, and other foods and think about what kind of scary things you can make with them. Halloween isn't about collecting as much junk food as possible, it's about having fun and being scared. Ask your children and they will think the same as they see and taste what kind of scary Halloween treats you have created.

Halloween Cookies

What you'll need:


- 18 ounces of butterscotch chips


- 1 1/2 cups of peanut butter (smooth)


- 24 ounces of chow mein noodles (not kidding!)


All you need to do is line a few cookie sheets with waxed paper or use parchment paper for baking. Then, melt the butterscotch chips over very low heat and stir until the consistency is smooth and creamy.


Next, mix the melted butterscotch, chow mein noodles, and peanut butter in a large mixing bowl.


Use a teaspoon to drop the gooey mix onto your cookie sheets. Let the dropped cookie mix sit there until it's firm. Store the Creepy Crawlers in plastic containers, or wrap them individually, or place the cookies in cookie containers or display them in your favorite candy dish. They will disappear faster than you can make them!

You can buy lobster tails already packed if you don't want to go through the hassle of cooking live lobsters. I've never cooked fresh lobsters because I'm afraid of them. I don't like the idea of bringing something home alive than killing it in boiling water and eating it. The thought of, it being alive a few minutes ago, will be in my head. I like eating lobster but I prefer the pre-packaged kind when I am making an at home recipe.

Lobster Pasta Salad



Ingredients:
1 box of pasta shells
1 lb lobster tails frozen
1 tbsp olive oil
2 to 3 leeks if small
Roasted bell peppers (orange, yellow, or red)
Half a container of grape tomatoes
1 cup miracle whip or mayo
½ cup sour cream
3 tbsp dill
¼ cup lemon juice
Sea salt and pepper to taste

preparation:

Prepare the shells according to the package by adding olive oil to water and salting with sea salt. 
Preheat the oven and place lobster tails in a dish and bake in a butter and garlic sauce sprinkled with salt. 
Drain the pasta and place it in a large mixing bowl. I use roasted bell peppers for all my salads because of the flavor but you can chop 1 bell pepper and add it to the pasta if you don't have roasted peppers. I chop 2 to 3 small leeks and add them to the pasta mixture along with the grape tomatoes.
In a separate bowl, mix the miracle whip, and sour cream with dill. Try not to skimp on dill by using plenty of it to give your salad a dill flavor. Add lemon juice to the sauce. Once the lobster tails are ready and peeled, mix them with the pasta. Season the pasta with sea salt and pepper. Once done, mix the pasta marinade into the pasta shells and put them in the fridge. 
That is the important step in this recipe. The longer it stays in the fridge, the better it will taste the next day. 
The peppers, onions, and seasonings need time to meld with the pasta to give the dish its flavor. Take out of the refrigerator and serve cold. This recipe is good served warm but to me, it takes better cold.
